Harvesting begins around April – September for fresh fish and July – September for frozen fish.
Premium quality bait and stringent handling procedures allow the fish to obtain/reach prime condition.
They are then hand caught, harvested and processed on the same day to capture absolute freshness.
These fish are then air freighted to markets in Japan, Europe, and South East Asia.
Frozen SBT are harvested and frozen to minus 60 degrees centigrade, within a 24 hour period.
