prawn & Pear Cocktail
Great for a starter, this very simple dish relies on top quality prawns of a larger size.

3 to 4 peeled Western King Prawns per serve
Salad mix of lettuce, sliced pears
Garnished with capsicum and fine herbs


2 egg yolks
1 tablespoon lime juice
1 tablespoon lemon juice
White pepper and salt to taste
1/4 teaspoon finely diced garlic
1/2 cup vegetable oil
1/2 cup olive oil

Method - mayonnaise
Mix together egg yolks, lime & lemon juice, salt, pepper & garlic in a bowl. Add the vegetable & olive oil slowly - whisking all ingredients together as you pour.
Simply place salad mix & prawns in a cocktail glass and spoon mayonnaise on to taste.
